Sweet & Spicy Slow Cooker Gingered Pulled Pork
Adventurous cooks get to show off their more exotic pantry holdings with this sweet, salty, smoky, and spicy recipe. A boldly seasoned, lean shoulder of pork transforms into juicy succulence in your slow cooker. Whether cradled into warmed Naan, tortillas, or flatbreads, smacked down on to toasty, buttery brioche, or piled high on those über fluffy, floury Hawaiian rolls, you will find your end product irresistible. Cheery, colorful coleslaw or Kimchi are great on top. You might have to fend off the hungry crowds with bottles of The Cleaver!
In a glass or stainless steel 13x9x2 inch cake pan, place the pork shoulder. Rub well all over with Spicy Brown Sugar + Smoked Sea Salt Rubdown. Cover with plastic film and refrigerate overnight.
Remove from refrigerator. In the bottom of a large slow cooker, place the sliced onions, Serrano pepper, ginger and cilantro. Put the rubbed pork shoulder on top. In a medium bowl, stir together the ginger beer, Red Boat Fish Sauce, Mae Ploy Chile Sauce, Thai Golden Mountain Seasoning, Sriracha, rice vinegar, coconut sugar (or substitute) and black pepper. The sugar dissolves while in the slow cooker. Pour liquid ingredients over the pork shoulder. Secure the lid and cook on low for 8-10 hours. When the meat falls apart easily, it is done. If the meat does not fall apart easily, cook longer.
Reserving the juices, remove the pork and place in a 13x9x2 inch baking pan. Discard the bone, the ginger coins, and cilantro. Cool until easy enough to handle. Using two forks, shred the pork meat. Place the leftover liquid in a saucepan on medium heat. Skim off any fat.
Reduce the liquid until it starts to thicken slightly. Season to taste with salt and pepper. Add the pork back to the reduced sauce and mix together. Serve with warmed flatbread or buttered, toasted buns with coleslaw, Kimchi and Japanese Style Black Sesame & Himalayan Finishing Salt.
